I used 1/2 cup of sugar instead of 2 cups. I also used unsweetened apple sauce instead of honey. I baked it in a 9×13 pan. I used a combination of carrots and sweet potatoes. I cut the carrots into smaller pieces and put them in the bottom of the pan. Then I sliced the sweet potato and placed them on top of the carrots. I mixed together the dry ingredients first and then added the wet ingredients. I poured the batter over the vegetables and baked it for about 40 minutes at 350 degrees F. I frosted it with a mixture of powdered sugar and vanilla extract. I let it cool completely before serving. It was delicious!
