To make broth, you need to start with a whole chicken. Cut off the neck and giblets the liver, heart, and lungs and remove the skin. Put the chicken into a large saucepan and fill the pan with cold water until the chicken is covered by about 1 inch. Bring the water to a boil, reduce the heat, and simmer for 30 minutes. Remove the chicken from the pot and let cool completely. Strain the broth through a fine mesh strainer set over another bowl. Discard the solids left in the strainer. Use the strained broth immediately or refrigerate it for later use.

You can freeze broth in ice cube trays and transfer the cubes to freezer bags. This way you can easily thaw the broth whenever needed.
Potato Substitutes For Chicken Soup

How To Make Chicken Soup Without Potatoes
